Big Stix Softball

Playing intramural softball has been something we have loved at USU. Last Tuesday, our team, Big Stix, played for the championship! Since the team we were playing was undefeated, we needed to beat them twice to get first place. We beat them 9-4 the first game and got annihilated about 23-7 the second game!!! We still had fun and earned the silver metal. Good times at USU.

How to make delectable cinnamon rolls

(Disclaimer: this blog is best read with a high pitched sweet voice)

First and foremost, a good chef is a HAPPY chef.

Roll out half of the "Rolls From Heaven" roll dough into a rectangular shape and gently spread a light baste of melted butter as shown above (with a genuine smile).

Using the remaining butter, make a conglomeration of butter, brown sugar, and pecans (if you're lucky) in the bottom of a 9x13 pan heating it in the oven. Then, with an even more glowing smile, spread a mixture of cinnamon and sugar over the dough emulating a joyful countenance.

Spread raisins on three quarters of the dough for the raisin lovers. Leave 1/4 of the dough raisinsless ensuring that all consumers will be satisfied.

Now it is time to begin to roll your sensation until it looks like this....

As you can see here, measuring with a knife is a great way to ensure that all of those delicious rolls will be about the same size. That way, nobody will be unhappy because they get the runt of the batch! There is no runt with Chef Mark!

Chef Mark loves to make his cinnamon rolls very fat or thick, if you will. Gently place the rolls in the 9x13 pan with utmost care.

Ta Da!!!! Now just let the tasty sensations raise for a while...

Mmmmmm....Notice how they look like you could eat one right off the screen already but I'm sure you'd never guess that this is before cooking the sweet treat! 350 for about 10 minutes will do it. Flip the rolls over so that the brown sugar and pecans-if-you're-lucky mixture is on top immediately after taking them out of the oven.

So much to do...so little time :)

It was so nice to have all of last week off of work and school! It was the public school's spring break. That meant spring break number TWO for me since I work at the Elementary school and learn from the Elementary school teachers. I had made a list of at least five projects that I wanted to do with all my spare time. My intentions were to get most, if not all,the projects completed.

The first project was to do my taxes. Check. The second project was to write out all of our thank you postcards. not check. It took A LOT longer than I thought! I barely got done with the project today!!! I'm glad we were so fortunate to get so many gifts for our wedding....and I'm glad I'm FINALLY done writing out all the thank yous!

Hopefully now I can continue on down my list. Next, I will paint some shadow boxes and decorate a little more in our cozy abode. I am also currently doing a project at work where I help make take home book kits encouraging parent involvement with reading. With a few books in each packet, my job is to come up with something creative such as a game, puppet show, or other activity that the parents can do with their child after reading the books that encourages learning. I've been testing them out on the Kindergarteners that I tutor and so far they have been pretty fun, I think!

HAPPY BIRTHDAY to US!!!

It's fun to celebrate our birthdays just five

days apart. This year was my GOLDEN birthday. 21 on the 21st! Pretty Exciting. To celebrate the once in a lifetime occurrence, we ate the delicious coconut cream pie (homemade by Mark...very impressive) with no utensils or hands!

It was a memorable birthday. We are looking forward to Mark's golden birthday next year! This year we had lasagna for dinner and one of Mark's favorites, strawberry shortcake for dessert. The candles barely fit on the cake!!! :)
